This bad boy was my post workout breakfast! So SO good! Just what I needed to warm me up from a snowy 5 mile run!
You have to make the Turkey sausage patty yourself too...
French Toast
- 2 slices of paleo pumpkin bread (recipe posted previously)
- 2 egg whites
- 1/2 cup almond milk
- tsp honey
- tsp cinnamon
- tsp vanilla
Turkey Sausage Patties
- 1 small red onion grated
- 4 Brussel sprouts grated
- 1 tsp ground black pepper
- 200g turkey breast mince
- 1 egg white
- 1tsp coconut oil
Additional Toppings
- 4 egg whites
- 1/2 banana sliced
- 2 tsp almond butter
* Put 2 good non stick frying pans on low heat.
* Prepare your Sausage patty by grating your onion and sprouts into a bowl, adding the black pepper, turkey and egg white and mincing together with your hands until everything is evenly dispersed.
* Split into 2 and shape each one I to rectangle shaped patties, and put on to fry...
* While your patty cooks, make up your French toast liquid mix. Mix your egg whites, almond milk, honey, vanilla & cinnamon together well.
* Pour onto a plate and lay your 2 slices of pumpkin bread in the mixture. Keep flipping them so the mixture can absorb on both sides.
* Leave the mixture to absorb a little longer while you check on your turkey patties. Make sure to flip the patties.
* Once the patties are looking nearly done, add a tsp of coconut oil to the other pan. Once it has melted add your coated pumpkin bread.
* Allow both the patties and French bread time to cook, remembering to turn both occasionally.
* Serve your toast on a plate. Add egg whites to frying pan. They'll cook quickly.
* Place your patties on top of your French toast, then add egg white.
* Slice your banana, lay across the too, and add a tsp of almond butter to each.
* Most importantly ENJOY! This was heaven!!!!!

Paleo Pumpkin Protein Bread
Hey guys,
So, as an avid baker Autumn/Winter is an exciting time for me. Unfortunately it generally leads to one too many slips, so I was determined to get my yummy baking fix while keeping things healthy!
I came up with this amazing yumminess! I'm so proud of the result, it's genuinely so tasty and moist, and was perfect as a snack with some Almond Butter...
- 1 can Pumpkin Purée
- 4 Eggs
- 1 cup Coconut Oil melted
- 2/3 cup Almond Milk
- 3 heaped Tbsp Natural Set Honey
- 3 cups Almond Flour (Ground Almonds)
- 2 scoops (4 Tbsp) Natural Unflavoured Hemp Protein Powder
- 2 tsp Baking Soda
- 2 tsp Cinnamon
- 2 tsp Nutmeg
- 1 tsp Cloves
- 1 1/2 tsp Ginger
* Pre heat oven to 170'c.
* Combine the pumpkin and eggs and mix well until evenly combined.
* Add the melted coconut oil and stir in well so it doesn't get chance to cook your eggs, then add your almond milk.
* Add your almond flour, hemp protein, baking soda, cinnamon, nutmeg, cloves and ginger and mix well until you get an even, thick mixture.
* It should smell AMAZING already (and taste it, go on, lick the spoon), but on the off chance you're even more of a flavour junkie, throw in some more spices... Why not?!)
* Pour mixture into a lined, large, loaf tin.
* Bake for 50 mins.
* Enjoy the wonderful smell.
* Once cooked (it will still seem a little wobbly), LEAVE TO COOL slightly. This is important as it allows the loaf to firm up enough to manouvre out of the tin whilst staying moist inside.
* Loosen around edges of tin, carefully turn loaf out into your hand then onto a cooling rack.
* Badaboom.

Apologies!
I've been neglecting my blog the past couple of days... Recipes to follow!
Today me and the hub are doing a long Sunday walk with the dog in the Peaks, then going to my sisters for Sunday lunch... Always Paleo, as my sister also eats Paleo :) Makes life simpler!
Anyhoooow, I went a little crazy in the fruit and veg shop the other day, and bought TONS of different squash, so you'll probably see a squash theme the next few days!
Seasonal fruit and veg makes me HAPPY!!!
Anyway, stay safe, keep warm, get outside and enjoy life!!
