Paleo Pumpkin, Cinnamon Swirl Gingerbread

Hi guys!
So sorry it's taken me so long to get around to posting this! I know it's been eagerly awaited, and I have to admit, it's a naughty one, but completely worth it!
This kind of signifies the cross over from autumn to winter!

Ingredients

- 3/4 cup Coconut Oil (melted)
- 1 can Pumpkin Purée
- 4 Eggs
- 2 heaped Tbsp Blackstrap Molasses
- 1 cup Coconut Palm Sugar
- 1 cup Ground Almonds (Almond Flour)
- 1 cup Coconut Flour
- 1 heaped Tbsp (yes TABLESPOON) Ginger
- 2 tsp Cinnamon
- 1 tsp Allspice
- 2 tsp Baking Soda
- 1 1/2 cups Unsweetened Almond Milk

For the Cinnamon Swirl

- 1 Tbsp Cinnamon
- 1 Tbsp Coconut Palm Sugar

* Pre heat oven to 175'c.
* Line a large baking tray (brownie tray) with baking paper.
* In a large saucepan, melt your coconut oil. (you'll use this pan for all of the mixture, saves on dishes!)
* Add your pumpkin purée and stir well until combined.
* Add your eggs one by one making sure to mix in thoroughly before adding the next (this ensures the eggs don't cook due to the warm oil/pumpkin.)
* Add your Molasses and mix well again.
* Now add all of your dry ingredients. The almond flour, coconut flour, baking soda, ginger, cinnamon and allspice. Mix this well.
* The mixture should become too thick. Add your almond milk and stir well.
* Pour 1/2 of your mixture into the baking tray and even out.
* Mix together your coconut palm sugar and cinnamon and pour in lines across the mixture in the tin. (LEAVE SOME OF THE CINNAMON MIXTURE)
* Pour the remainder of the mixture on top of the other.
* Now drag a knife through your gingerbread tin in random swirls.
* Smooth down.
* Sprinkle the remainding cinnamon sugar mixture across the top of your gingerbread.
* Bake on 175'c for 1 hour.
* Try and allow it to cool for at least a little while. It gives the gingerbread time to firm a little.

* ENJOY!! I enjoyed... Too much of it haha! So much I've made another one!

Paleo Gingerbread Protein Pancakes

Well well well. The festive flair was bound to kick in sooner or later, and along with discovering a 'rubbish free' mincemeat so I can soon invent paleo mince pies, I made THESE!
Sometimes I have to pat myself on the back haha! (if you want to make these for kids, just omit the hemp protein and add a little more coconut flour.)

For the Pancakes.
- 2 eggs
- 1 heaped tsp natural blackstrap molasses
- 1 1/2 cups Almond Flour (Ground Almonds)
- 2 tbsp Coconut Flour
- 1 scoop Unflavoured Hemp Protein
- 2 heaped tsp ginger
- 1/2 tsp cinnamon
- 1/2 cup coconut palm sugar
- 1 cup unsweetened almond milk

For the Topping
- 1 Tbsp Creamed Coconut Melted
- 1 Tbsp Cashew Butter
- 1/2 tsp Cinnamon
- a drop of Vanilla
- 1 heaped tsp Raw Chocolate Tropical Nut Spread (or similar)
- Handful of Pecans
- Sprinkle of Raw Cacao Nibs

* Heat a good non stick pan on low.
* Mix eggs and molasses well in a bowl. the molasses will take a while to mix well, if you're struggling, add your almond flour now.
* Add almond flour, coconut flour, protein, ginger, cinnamon and sugar and mix.
* Now add your almond milk slowly until you get a thick cakey mixture.
* Spread your pancakes into whatever shape you wish (grab a gingerbread man cookie cutter and add it to your frying pan to make your pancakes fun for your kids!)
* Allow to cook slowly until bubbles appear across the top, then flip.

* While your pancakes are cooking, mix together your melted creamed coconut and cashew butter, cinnamon and vanilla until smooth.

* Once all your pancakes are cooked, pile them up, scoop your chocolate spread on, pour over your cashew cream mixture and sprinkle over your pecans and cacao nibs...

Most importantly, ENJOY! These guys may be my favourite invention yet. PERFECT for Christmas! And taking out the protein they are perfect for all the family for Christmas morning!

Paleo Smokey Turkey Veg Frittata

I realised I don't tend to post my savoury meals half as much as my sweet ha!
This one was so yum, it deserves a good mention!

Ingredients
- 250g Turkey Breast Mince
- 1 Leek Grated
- 1 Red Onion Chopped
- 1/4 Red Cabbage Grated
- 1/2 Courgette Grated
- 1/2 Sweet Potato Grated
- 2 tsp Cinnamon
- 3 tsp Smoked Paprika
- 8 Eggs
- 4 Mushrooms
- Handful of Fresh Spinach

(PLEASE NOTE - This makes 4 Large Servings)

* Heat a large frying pan.
* Add all of your vegetables, onions and sweet potato to the pan and fry on high for a few minutes until softened a little...
* Add your turkey mince, sprinkle over your cinnamon and paprika and keep stirring as your mince cooks through.
* Once you are sure your mince is cooked through, whisk together your eggs and pour evenly over all of the mixture. (you may need to quickly stir to coat evenly)
* Leave this cooking on a medium heat for around 5 minutes and heat your grill.
* Slice your mushrooms and arrange on the top of your frittata. Sprinkle the spinach around the edges.
* Move the frying pan into your grill and grill the frittata for around 5/10mins. I suggest you keep an eye out though, they can go from undercooked to burnt VERY quickly!
* When the top is lovely and browned, your frittata is ready to go!

Paleo Pumpkin Cake with PB & Cacao Nib Topping

I haven't posted in so long! I've had so many things going on, all VERY exciting!
Here is a recipe I winged while at my sisters this weekend.

For the Pumpkin Cake
- 3/4 Can of Pumpkin Purée
- 4 Eggs
- 2 Cups Almond Flour (Ground Almonds)
- 2 tsp Cinnamon
- 2 tsp Ginger
- 1 Tbsp Stevia (I would have used honey if it had been available at the time and probably used 2 tbsp)
- 1 tsp Baking Soda

Toppings
- Roughly 5 Tbsp Chunky Peanut Butter (I say roughly as I spread on each piece as I ate)
- 1 cup Cacao Nibs

* Pre heat oven to 180'c.
* Line a small rectangular tin with baking paper. This recipe can also easily be made into a loaf!
* Mix together your eggs and pumpkin until smooth.
* Add your Cinnamon and Ginger and stir well. If you can smell the spices strongly, you're doing well!
* Add your almond flour, stevia and baking soda and mix well until completely combined. (Your mixture should be like a cake mixture consistency)
* Pour into tin and bake for 25mins if in wider rectangle tin, and 35mins if in loaf tin.
* Allow to cool, and then decide whether you want to smooth over your peanut butter and sprinkle on the cacao nibs, or whether to do it on individual pieces as your consume!

Paleo Maple Cinnamon Protein Pancakes

I've been neglecting posting all of my recipes for a few days, sometimes it's because I'm terrible at making them up as I go and forgetting what I did ha!
These guys deserve a big mention though!
I'm currently suffering the 'lady' cravings, and these definately hit the spot, although I want to add that although these are paleo and clean, you don't want to be eating these ALL the time like my other pancakes... These guys have a higher sugar content from the maple syrup.

Pancakes

- 2 egg whites
- 1/2 cup almond milk
- 2 tbsp pure maple syrup
- 1 scoop natural hemp protein
- 2 tbsp almond flour (ground almonds)
- 2 heaped tbsp coconut flour
- 1/2 tsp cinnamon

Toppings

- 1 heaped tsp raw chocolate hemp spread
- 1 heaped tsp raw pecan butter
- handful of pecan nuts
- drizzle of pure maple syrup

* Put a good non stick pan on LOW heat.
* Mix together egg whites, almond milk and maple syrup.
* Add your protein powder and almond flour and mix well.
* Now add your coconut flour a little at a time and mix. The reason for this is because coconut flour can dry mixture out very quickly if too much is used. You want a thick cake consistency.
* Add your cinnamon and mix well until all combined and smooth.
* Add mixture to pan in whatever pancake shapes you fancy and be patient to let them cook on LOW so they don't burn. Once the top has bubbles across the top it's time to flip them.
* Scoop on your chocolate spread, and pecan butter, sprinkle on your pecans and then drizzle over the syrup.
* Trust me, you want to enjoy these ones! AMAZING!

Paleo Banana Protein Pancakes with Warm Blueberries

This is my favourite breakfast go-to.
Quick, easy, tasty, clean.

- 2 small banana's mashed
- 2 egg whites
- 1 scoop hemp protein
- 1 tsp cinnamon
- 1 tsp ginger
- 1 cup of frozen blueberries

* Put a good non stick pan on LOW heat.
* Mash your banana's and mix with the egg whites until combined.
* Add your protein powder, cinnamon & ginger and mix well again.
* Pour into whatever pancake shapes take your fancy, wait for the top to bubble across, then flip!
* Meanwhile, put your frozen blueberries in a microwave safe bowl.
* Microwave for around 2.5mins, but keep an eye on them. You want them bubbling but not exploding.
* Serve your stack of pancakes, pour over the blueberries, and enjoy!

Blueberry & Banana Bread French Toast with Homemade Sausage Patty & Spinach

So, here is something that was born of a couple of other things ha!
For the Turkey Sausage meat recipe, read previous posts, here is the French Toast recipe...

* 2 Slices of Your Homemade Blueberry & Banana Protein Bread
* 2 Egg Whites
* 1/2 cup almond milk
* A few drops of vanilla
* 1/2 tsp cinnamon

(Side note - you can add honey to your liquid mixture if you like a little sweetness, I chose not)

* Heat a good non stick frying pan on low heat.
* Whisk together your egg whites, almond milk, vanilla and cinnamon (and honey if using).
* Pour onto a plate, and lay your slices of bread into the mixture.
* Allow each side to absorb some liquid a little, then flip over and do the same on the other side.
* Place in your frying pan! Give them a good few mins on either side.

* Add your Turkey Sausage Patties and a handful of fresh spinach!

Paleo Banana & Blueberry Protein Bread

I realise I've be slacking the past 2 days. I've been exhausted beyond words and been looking after my monkey.
She's back to school today, so morning runs are back in full swing!

Anyway, I made a few things yesterday, but the basis for most was this bread. It's far more cake like than bread, but it's yummy regardless.

- 3 banana's mashed
- 4 eggs
- 3/4 cup coconut oil melted
- 2 scoops hemp protein powder
- 1 heaped tsp macaroot powder (optional)
- 2 cups almond flour (ground almonds)
- 2 tsp cinnamon
- 1 tsp cloves
- 1 tsp nutmeg
- 1 tsp ginger
- 1 tsp vanilla
- 2 tsp baking soda
- 1 heaped Tbsp natural honey
- 1 cup frozen blueberries

* Preheat oven to 175'c.
* Line a large loaf tin.
* Mix together banana, eggs, coconut oil and vanilla.
* Add your hemp, maca, almonds, cinnamon, cloves, nutmeg, ginger & baking soda and mix well until smooth.
* Add your honey. As strange as it may sound adding it at this point, if you add it earlier it's harder to mix through evenly. Mix well until combined.
* Now stir through your blueberries. I used frozen because they hold up better when stirring in! Plus they're more cost efficient!
* Pour into lined tin, smooth out and bake at 175'c for 40-45mins.
* Leave to cool slightly in tin, then tip out onto a cooling tray.
* Enjoy!

Paleo Carrot & Cauliflower Protein Pancakes with Homemade Turkey Sausage Patties & Avocado

So, someone requested the recipe for these guys, so here it goes!
I'll sort of have to remember, as I create things as I go along ha!

Turkey Sausage Mix (Shape into whatever takes your fancy :) )

- 500g Turkey Breast Mince
- 2 Red Onions
- 10 Brussel Sprouts
- Black Pepper
- 2 Egg Whites

* Grate the onions and sprouts into a bowl. Add black pepper to your liking, then add the turkey mince and egg whites and work together well with your hands.
* That's it! When you're ready to use it shape into whatever you wish and dry fry or bake! (Takes longer to fry than pancakes so I always set these off cooking before I make my pancake mixture)

Carrot & Cauliflower Protein Pancakes

* 2 Egg Whites
* 1 Cup Almond Milk (either use agave sweetened or add 1tbsp Honey)
* 1 1/2 tsp Vanilla
* 2 Scoops Unflavoured Hemp Protein Powder (If you use an alternative and it's vanilla flavoured, then just omit the above vanilla)
* 1 tsp Spirulina Powder (optional)
* 1 cup Almond Flour (Ground Almonds)
* 2 tsp Cinnamon
* 1 tsp Ginger
* 2 tsp Paprika
* 1 Carrot (grated)
* 4 Large Cauliflower Florets (grated) this is roughly 2 cups of grated cauliflower.

* Put good non stick pan on LOW heat.
* Mix together egg whites, almond milk and vanilla.
* Add protein powder, spirulina, almond flour, cinnamon, ginger and paprika and mix well.
* Add your grated carrot and cauliflower and give a final good mix. Mixture should be thick, and if using hemp and spirulina will be dark green :-) ha!
* Cook pancakes in whatever shapes you like on low heat, when bubbles appear all across the top then flip and cook the other side...

Finally!

* Stack your pancakes up, arrange your sausage patties on top and then slice up half of an avocado and serve!

PS - Don't buy hemp protein especially, I know whey isn't paleo, but if you are lenient in your protein powder choices then whey protein will add extra tastiness to these bad boys!

PPS - Turkey sausage mix will refridgerate or freeze so you can use when you fancy!

PPS - So will pancake mix...

PPPS - Going now! Lol!

Paleo Pumpkin Bread French Toast

This bad boy was my post workout breakfast! So SO good! Just what I needed to warm me up from a snowy 5 mile run!
You have to make the Turkey sausage patty yourself too...

French Toast

- 2 slices of paleo pumpkin bread (recipe posted previously)
- 2 egg whites
- 1/2 cup almond milk
- tsp honey
- tsp cinnamon
- tsp vanilla

Turkey Sausage Patties

- 1 small red onion grated
- 4 Brussel sprouts grated
- 1 tsp ground black pepper
- 200g turkey breast mince
- 1 egg white
- 1tsp coconut oil

Additional Toppings

- 4 egg whites
- 1/2 banana sliced
- 2 tsp almond butter

* Put 2 good non stick frying pans on low heat.
* Prepare your Sausage patty by grating your onion and sprouts into a bowl, adding the black pepper, turkey and egg white and mincing together with your hands until everything is evenly dispersed.
* Split into 2 and shape each one I to rectangle shaped patties, and put on to fry...
* While your patty cooks, make up your French toast liquid mix. Mix your egg whites, almond milk, honey, vanilla & cinnamon together well.
* Pour onto a plate and lay your 2 slices of pumpkin bread in the mixture. Keep flipping them so the mixture can absorb on both sides.
* Leave the mixture to absorb a little longer while you check on your turkey patties. Make sure to flip the patties.
* Once the patties are looking nearly done, add a tsp of coconut oil to the other pan. Once it has melted add your coated pumpkin bread.
* Allow both the patties and French bread time to cook, remembering to turn both occasionally.
* Serve your toast on a plate. Add egg whites to frying pan. They'll cook quickly.
* Place your patties on top of your French toast, then add egg white.
* Slice your banana, lay across the too, and add a tsp of almond butter to each.
* Most importantly ENJOY! This was heaven!!!!!

Paleo Pumpkin Protein Bread

Hey guys,
So, as an avid baker Autumn/Winter is an exciting time for me. Unfortunately it generally leads to one too many slips, so I was determined to get my yummy baking fix while keeping things healthy!
I came up with this amazing yumminess! I'm so proud of the result, it's genuinely so tasty and moist, and was perfect as a snack with some Almond Butter...

- 1 can Pumpkin Purée
- 4 Eggs
- 1 cup Coconut Oil melted
- 2/3 cup Almond Milk
- 3 heaped Tbsp Natural Set Honey
- 3 cups Almond Flour (Ground Almonds)
- 2 scoops (4 Tbsp) Natural Unflavoured Hemp Protein Powder
- 2 tsp Baking Soda
- 2 tsp Cinnamon
- 2 tsp Nutmeg
- 1 tsp Cloves
- 1 1/2 tsp Ginger

* Pre heat oven to 170'c.
* Combine the pumpkin and eggs and mix well until evenly combined.
* Add the melted coconut oil and stir in well so it doesn't get chance to cook your eggs, then add your almond milk.
* Add your almond flour, hemp protein, baking soda, cinnamon, nutmeg, cloves and ginger and mix well until you get an even, thick mixture.
* It should smell AMAZING already (and taste it, go on, lick the spoon), but on the off chance you're even more of a flavour junkie, throw in some more spices... Why not?!)
* Pour mixture into a lined, large, loaf tin.
* Bake for 50 mins.
* Enjoy the wonderful smell.
* Once cooked (it will still seem a little wobbly), LEAVE TO COOL slightly. This is important as it allows the loaf to firm up enough to manouvre out of the tin whilst staying moist inside.
* Loosen around edges of tin, carefully turn loaf out into your hand then onto a cooling rack.
* Badaboom.

*Add your honey and mix in processor until smooth again.
*Add eggs to processor one by one.
*Add vanilla, almonds, baking powder and cocoa and mix until even again.
* Now add either your blueberries or chocolate chips and continue food processing if blueberries, or hand mix in the chocolate chips.
* Bake in paper lined cake tin for 35mins.
* Either leave to cool slightly, or get a biiiiig dollop of coconut cream icecream in the centre and grab a spoon ;-)

Oh, and my 3yo who won't eat avocado's is begging me for more haha!

Paleo Blueberry & Coconut Cake

Here's another one I made up as I went along...

- 1/2 cup melted coconut oil
- 1 tsp vanilla
- 1 banana mashed
- 2 eggs
- 150g almond flour (it was roughly 3 cups)
- 1 heaped tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 2 tbsp natural honey
- 1/2 cup coconut milk
- 1.5 cups frozen or fresh blueberries
- 1 cup desiccated coconut (unsweetened) plus extra for sprinkling on top.
- 1 heaped tbsp ground flaxseed

*Pre heat oven to 175'c.
*Melt coconut oil in a saucepan. Take off the heat and add the banana, vanilla, coconut milk and honey, and stir in the eggs one by one (to make sure they dont cook).
*Add the almonds, spices and baking powder and mix well.
*Add the desiccated coconut and flaxseed and mix well again.
*Add your blueberries and mix well, I'd the mixture seems too runny add more coconut, if it seems too thick add a little more coconut milk. The mixture should resemble a slightly thick sponge mixture.
*Pour into a 23cm, paper lined springform or loose based round cake pan.
*Sprinkle extra desiccated over the top and then bake for 30mins.
*Leave to cool slightly before moving onto a cooling rack.

Paleo Paella

Now, before I make the Spanish people hiss at me, I realise this is in no way anywhere near a traditional Paella... Ok, so, now that's out of the way here goes...

- 1 head of cauliflower chopped into tiny bits
- heaped tsp coconut oil
- Small red onion sliced
- 1/2 cup mushrooms sliced
- 200g diced turkey breast
- 1 small courgette/zucchini
- 1 heaped tsp smoked paprika (add more or less to your liking)
- 200g king prawns
- 2 large handfuls of fresh spinach leaves

*Heat a large frying pan and put coconut oil in until melted...
*Keep pan on high heat and add your cauliflower 'rice' and onions and fry for 5 minutes.
*Add mushrooms, turkey and courgette and sprinkle over paprika.
*Keep stirring every couple of minutes until turkey is cooked through and your 'paella' turns a lovely golden brown colour.
*At this point, add your prawns and spinach and stir through. Leave to fry for another few minutes.
* Give it another stir, making sure everything is evenly displaced and evenly browned and then serve!!
* ENJOY!

Side Note - If I'd have had any in I would have added squid and maybe clams to this too. Or any yummy seafood.

Paleo Banana, Pear & Flax Muffins

- 1 Banana mashed
- 1 large or 2 small pears, cored and cut into small chunks.
- 2 egg whites
- 1/2 - 1 cup milled flaxseed (the measurement will differ by how runny your mixture is, flax is good to thicken it so judge as you add)
- 1 heaped cup of almond flour (ground almonds)
- 1 heaped tsp baking powder
- 1 heaped tsp cinnamon
- 1 tbsp unbleached wholenut peanut butter (smooth or crunchy, your choice but I used crunchy)

*Pre heat oven to 180'c
*Add egg white to banana and mix well.
*Add pear and 1/2 cup of flax and mix.
*Add almond flour, baking powder, cinnamon and mix well.
*Mixture should be mixed evenly and the texture of normal muffin batter, add more flaxseed to thicken up if needed.
*Use ice cream scoop to get an even measure for your muffins, I used large muffin cases and used 2 scoops for each.
*Bake for 25mins or until browned nicely on top.
*TRY to allow them cooling time. They firm up, but stay amazingly moist in the centre... Even when cooled!

Enjoy!

Apologies!

I've been neglecting my blog the past couple of days... Recipes to follow!
Today me and the hub are doing a long Sunday walk with the dog in the Peaks, then going to my sisters for Sunday lunch... Always Paleo, as my sister also eats Paleo :) Makes life simpler!
Anyhoooow, I went a little crazy in the fruit and veg shop the other day, and bought TONS of different squash, so you'll probably see a squash theme the next few days!
Seasonal fruit and veg makes me HAPPY!!!
Anyway, stay safe, keep warm, get outside and enjoy life!!
It's beautiful out there!

Paleo Banana, Sweet Potato & Cranberry Breakfast Muffins

So, before my mission of health, I used to bake... ALOT! I find it very therapeutic... It's great now I'm really enjoying it again, and discovering new healthy recipes makes my day!
Here's one I free handed this morning!

- 2 Bananas mashed
- 3 egg whites
- 1 Tbsp coconut oil
- 2 cups grated Sweet Potato
- 1/4 cup fresh cranberries sliced
- 1 heaped cup Almond Flour (ground almonds)
- 1tsp baking powder
- 1tsp cinnamon
- 1/4tsp ground allspice
- 1Tbsp Natural unbleached peanut butter (crunchy or smooth, your choice)
- Natural Honey

- Pre-heat oven to 180'c.
- Mash your bananas and add the egg whites and coconut oil and stir well.
- Add cranberries and sweet potato and mix again.
- Now add the dry ingredients and mix again.
- The consistency should be quite thick, for added goodness omit a little sweet potato for milled flaxseed. (I meant to do this but forgot, that's what you get for winging it ha!)
- Lastly add your PB and mix VERY well to make sure it spreads evenly throughout.
- Make sure you have a silicone muffin pan, or buy the good, brown muffin wrappers.
- Use an ice cream scoop for even muffins, scoop mixture into cases or pan and tap to flatten down.
- DRIZZLE (not pour! Little drizzle!) some honey over the top of each muffin.
- Bake for 20-25mins until browned on top and firmish to the touch (they will be sticky muffins, that's half of the fun)
- LEAVE TO COOL until they've set a little, or you wont get them out of the pan in one piece. (yeah, it's hard to wait but very worth it)
- Try and allow them cooling time on a rack too once removed, but if you can't then hey, go for it! I've already eaten 3 ha!

Enjoy!

Paleo Banana Pancakes

Ok, you have to believe me when I say that these in no way taste like they're healthy! Every time since I created the recipe I have to make sure I didn't put something 'bad' in without paying attention! THAT'S how amazing they are! AND GUILT FREE!
These grain free, dairy free pancakes are by no means 'settling'... I would take these over the regular bad boys any day!

Lauren's Paleo Banana Pancakes

- 1 Banana Mashed
- 1 Egg White
- 1 cup of Ground Almonds/ Almond Flour
- 1/2 tsp Cinnamon
- 1/2 tsp Baking Powder

* Heat really good non stick pan on LOW...
* Mash banana in a bowl, add egg white and mix well.
* Add almond flour, cinnamon and baking powder and mix really well until pretty much smooth (the mixture should be quite thick)
* Scoop into 4 pancakes and cook on LOW till bubbles appear all the way across the top of the pancakes, then flip and cook the other side.

Serve with sliced banana between the layers, or microwave heated raspberries :)
You can thank me later!
